Good Morning Vietnam!


Time for my post-Vietnam photos! A marvellous country to tour, made more enjoyable by wonderful company!

How can the experience in Vietnam be complete without a taste of their cuisine. Their 'Pho', Springrolls and ESPECIALLY the coffee are simply the best!

The best part of the trip? Of course it's the company! I had such a blast just hanging out with Xiaomin, Juan, Keow and K.K!

In His Time

Today is a big day for me full of emotions and excitements.

After 10 years 1 month, I have finally left the organisation to pursue my interest. It took me a while to pick up the courage and the determination to venture into unchartered territories. The even better part is that I have actually found a job where my interest lies. But most importantly, all these made me realise that Faith and Trust in God is really the Key. No matter how intelligent and organised Man is, nothing can be accomplished without His guidance and grace. It is NOT by my virtues that I have such a wonderful family, an adorable wife (I love her soooo much), bosom friends, an enriching education, my career so far (esp this miraculous transition), an apartment with a view to kill, a comfortable transport... From what has happened to me thus far in my life, I am beginning to see that everything is truly...

In His Time.

Praises be to the Almighty, the King of Kings, the Lord of Lords! Amen!

Bukit Timah



Went trekking at Bukit Timah with Xiaomin, Shufen and Noah today in preparation for the trip to Mt Ophir. Elder Chris led us through an up/downhill route which took us about an hour and a half with short breaks in between (thus the photo opportunities). Xiaomin and Shufen were quite excited about it although there were complains of '屎' (mud) along the way as it had rained earlier. Now Shufen has to get a 'standard' SAF Brooks for the trip... we wouldn't want to dirty her expensive Adidas!!!

Eggs


It's not as easy as it looks to cook a simple hard-boiled egg to perfection. Temperature... timing... etc etc etc... Here are a few tips I've picked up:

1. Be sure that the temperature difference between the water and the eggs is not too great. For example, never put eggs from the refrigerator straight into boiling water. The eggs will crack for sure due to "热胀冷缩". Hence, we can warm the eggs (with warm water or our hands) first before putting them into the pot. And turn down the heat to make sure the water is not boiling hot when we put the eggs in.

2. Add salt or vinegar to the water so that should the eggs crack, the whites will coagulate faster to prevent further seepages. I prefer salt cause the smell of vinegar is too strong for me. Salty whites taste nicer too... haha...

3. Roll the eggs about in water for the first 30sec to 1min after you put them in the pot. This action will attempt to "centralize" the yolks in the center of the eggs rather than stick to the sides. Purely for aesthetic purposes.

4. Put the eggs in cold water immediately after you have cooked them. This will make it easier for you to remove the shell. The whites inside will contract and not 'stick' to the shells.

The egg in the pic was boiled for about 5-6min under small heat. The yolk was not fully cooked for the best taste and easy digestion. A fully cooked one would take about 9-10min.

Ops


Got this wound on my right hand from rollerblading today... an accident after attempting a high-speed 180 turn... I've got some scratches on my face and right knee too. Here, my frens offering to 'operate' on my wound...

Labour Day Tour

My church organised an excursion to a crocodile farm, a vegetable farm and a fish farm as part of the traditional "May Day" outing. Quite an enjoyable experience with plenty of photo opportunities!

Dun worry. It's not slimy to the touch.

Crocodile Eggs! But they were not for sale.

Astonished to see so much wheat grass!

Beautiful with the dews.

Didn't really see a lot of fishes but saw a couple of dead frogs.
